This pudding is gluten free, dairy free, refined-sugar free, vegan
400ml can coconut cream
1 large avocado
2-3 tablespoons pure maple syrup
2-3 tablespoons carob powder
Place all ingredients in a blender and blend until mixture is smooth and creamy.
Pour into individual bowls and refrigerate for 2-3 hours or until set.
Pudding can also be eaten at room temperature but the mixture will just be a little bit runnier.
