Marmalade Friands

These friands are gluten free, dairy free, refined-sugar free


Friand Ingredients

1¼ cup ground almonds or almond meal
⅓ cup gf plain flour
⅓ cup raw unprocessed honey
zest of 1 orange, finely chopped
5 egg whites, whisked until frothy
125g df butter, melted and cooled

Friand Topping

¼ cup (80g) sf marmalade jam


Preparation

  1. Preheat oven to 180°C
  2. Grease 8 friand moulds or muffin tin

Method

  1. In a bowl sift together the flour and almond meal.
  2. Add the chopped orange zest then stir in the egg whites and agave syrup/honey, followed by the cooled melted butter.
  3. Spoon the batter into the prepared moulds until they are about three-quarters full.

Cooking

Bake for 25 minutes (less for the muffin tin) until golden and cooked through.

Finishing

Allow the friands to firm up in the moulds for a few minutes before turning out to cool on a wire rack, right way up.

Topping

Heat the marmalade in the microwave until melted then brush the tops of the warm friands with the melted jam and allow to cool.

Storage

Keep in an air tight container.
