Banana and Berry Ice Cream

This ice cream came about because I was going to a dinner party where the majority of the guests eat very little natural sugars, so I wanted to make a dessert that was sweet, but did not have any added honey or maple syrup of any kind. So this ice cream is only sweetened by the ingredients in it. It is deliciously smooth, light, and just sweet enough. There was none left at the end of the night and one of the kids licked the bowl I brought it in absolutely clean!

Fresh Pineapple Jelly

I have been wanting to develop a jelly that is all about the fruit rather than the sugar. This pineapple jelly is so simple and has no added sugar or sweeteners. It has 4 ingredients in total! It is light and delicious.

Christmas Cake

This Christmas Cake is moist and flavoursome with none of the heaviness that can come with fruit cake. It is made with no nuts, so is lunchbox safe. It is packed full of fruit so if you have a sweet tooth it will certainly hit the spot! Heat it slightly and serve with warm dairy free custard as a dessert or enjoy plain. We are giving a few pieces to my daughter’s teachers at school as a thank you gift (along with a few pieces of the yummy coconut ice!).
