This ice cream came about because I was going to a dinner party where the majority of the guests eat very little natural sugars, so I wanted to make a dessert that was sweet, but did not have any added honey or maple syrup of any kind. So this ice cream is only sweetened by the ingredients in it. It is deliciously smooth, light, and just sweet enough. There was none left at the end of the night and one of the kids licked the bowl I brought it in absolutely clean!
This ice cream is gluten free, dairy free, refined sugar free, egg free, coconut free, vegan
Ice Cream Ingredients
2 large ripe bananas
2/3 cup macadamia meal
approx. 1 cup almond milk
approx. 1 cup frozen berries
nutmeg (to taste)
cardamom (to taste)
Method
Place all ingredients into the blender and blend until really smooth.
Finishing
Pour into ice cream maker or alternatively pour into container and place in freezer and stir every 1 hour until set.
To Serve
Top with some fresh strawberries or blueberries.
Storage
Keep in an air tight container in the freezer.
